There's ones you'd want because you're interested in who wins. And then there's ones you'd want because they'd be so damn exciting (and who wins is of less importance).

In the latter category (off the top of my head):

    Pac/Duran (135)
    Chavez/Arguello (130)
    Pryor/Duran (140)
    Sanchez/JMM (126)
    JMM/Morales (126)

    LOL at Foreman/Tarver

before the bout: got any excuses, George?

after the bout: Boxer Antonio Tarver was pronounced dead on arrival at Montefiore Hospital last night after suffering an internal decapitation during a first round loss to George Foreman...

Sadistically speaking, I'd pay 99.95 on PPV to see Julian Jackson vs Teddy Reid.

Duran doesn't know how to cook. Pea could certainly teach him that.

    My top 5 would be

    Duran Vs Broner

    Duran Vs Hamed

    Duran Vs Tszyu

Duran Vs Chavez (just so everyone could see what a 1 sided beating this would be).

Duran Vs Pacquiao (as it would be an excellent fight, and interesting mesh of styles).

Duran-Chavez would be more competitive than Duran-Pacquiao.

Duran would wipe his ass with Manny, and knock him out.

There's no way it would. Pacquiao is flat out better than Chavez, and matches up better stylistically.

Chavez would come straight at Duran round after round, and the faster, stronger Duran would just have his way with him.

Pacquiao's speed, footwork, and weird attack patterns, not needing to be set etc, would give Duran something to think about, and a decent test. Ultimately Duran is better than Pacquiao, and Pacquiao's lack of infighting would show, but it's still an interesting fight, far more interesting than Duran Vs Chavez which would basically be like Floyd Vs Marquez.
