Was wondering the same thing. How would that even be enforceable? If you're pulling your punches chances are very slim that you would knock somebody out. It's not some 1 in a million lottery odds though. Does the KO winner have to forfeit a larger amount of their purse? If that was the case couldn't the party who has something to gain from it take a dive? Neither scenario would seem likely but how could a no knockout clause in a contract address either?
