It's not even my favorite Jackson one punch KO. I prefer Jackson-Drayton. The look on Drayton's face like "WTF was that???" followed by Julian pointing to the canvas.
Not saying its the best but George's walking uppercut vs Cooney was one of the coolest. Just an old fat guy out for a leisurely stroll
It's not one usually mentioned, but I'm a sucker for a good uppercut and I love Spinks vs Pops. Walcott vs Charles III and the already mentioned Foreman vs Cooney are great too.
Though I can't stand him, I think Davis-Santa Cruz is easily the best one punch KO of the last 5-10 years.

Lewis-Rahman 2, watch that video at least once a year, usually turn off around the point at which Lewis is completely messing up his prepared and clearly rehearsed line about turning Hasim Rahman into Hasbeen Rahman
It is one of my favourite knockouts ever, but being absurdly pedantic, I'm not sure it counts as a one-punch KO since he set up the monster right hand with the left hook. Probably just me though.
No, it definitely counts. The left hook, as you said, merely set it up. It was the right hand and the right hand alone that put him to sleep.
