Santana is a great example, was a hard latin rock artist, then prog/mystical, then fucking latin disco music, culminating in duets with Matchbox 20.
Pretty much starting with Inner Secrets in the late 70s...but to be fair, they'd exhausted that genre by then...hence only 4 or 5 albums released during the 80s and then the hideously commercial Supernatural...as you mentioned.
