Not without a fight, though. That is, if we're talking about Jones at the peak of his Light-Heavy powers putting on a few pounds while still in his prime, & tackling the fairly-green (though outstanding) Holyfield of the late-80's.
Terrible Matchup. Evander Holyfied is the greatest ever Cruiserweight and Roy Jones never fought at Cruiserweight. What next: Roberto Duran vs Naseem hamed at Lightweight?
If you took the Jones of his early Light-Heavy days & instructed him to add a few extra pounds, I think he could make a fight of it for a time...only for a time, mind, but Holyfield was still pretty green at Cruiser (although in Qawi, he proved he could overcome that). Don't misunderstand me, I'm confident Holyfield triumphs, & I'd be pretty shocked, honestly, if there was any other result, but I do think Jones was both skittish & slick enough to run him a merry chase for a while here.
