How long before we can do MMA mythical match ups ?

What year did the sport reach a point where everybody knew what they were doing? And how come prime Gracie versus prime GSP is a mismatch but prime Dempsey vs Klitschkos and some will pick Dempsey ?? Is that because there is a lot more to mma than boxing ?

 

Dempsey would get slaughtered.
